In a separate bowl, mix together 2 1/4 cups of flour, 1 teaspoon of baking powder, 1 teaspoon of cinnamon, and 1/2 teaspoon of salt.
Gradually add the dry ingredients to the wet ingredients in the mixer, scraping down the sides as needed.
Prepare a heavily greased 9x13 inch baking pan for the batter.
Spread the batter evenly into the baking pan.
In a small bowl, mix 1/4 cup of granulated sugar with 1 tablespoon of cinnamon for the topping.
Sprinkle the cinnamon sugar mixture evenly over the top of the batter in the pan.
Bake the blondies in a preheated oven at 350°F until done, checking for doneness.
Once baked, let the blondies cool completely before cutting them to avoid breaking.
Cut the cooled blondies into large squares or bars, as desired.
