Chicken Sausage, Spinach & Cheese Breakfast Frittata

Preheat the oven to 375°F.

Heat 1 tablespoon olive oil in a large oven-safe skillet over medium heat.

Add chopped onion and diced red bell pepper; sauté until softened, about 5 minutes.

Stir in minced garlic and cook until fragrant, about 1 minute.

Add sliced chicken sausage and cook until browned, about 5-7 minutes.

Add fresh spinach and cook until wilted, about 2-3 minutes.

In a bowl, whisk together 8 large eggs, 1/2 cup milk, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/4 teaspoon nutmeg.

Pour the egg mixture over the sausage and vegetables in the skillet.

Sprinkle cheddar cheese and parsley evenly over the top.

Cook on the stovetop for 2-3 minutes until the edges start to set.

Transfer the skillet to the preheated oven.

Bake for 15-20 minutes until the frittata is set and lightly golden.

Remove from the oven and let cool for a few minutes.

Slice and serve warm, garnished with additional parsley if desired.
