1

Fill a tin of red kidney beans with water and add it to an ovenproof pot, bringing it to a boil for about 5-6 minutes.

2

Add coconut milk to the pot and mix, then cover and bring to a boil again.

3

Season the pot with 5 sprigs of green onions, 3 cloves of garlic, a piece of ginger, and 1 tablespoon of Maggi all-purpose seasoning, mixing well.

4

Add 1 scotch bonnet pepper and 0.5 teaspoon of crushed pimento seeds, along with 0.5 teaspoon of browning for color.

5

Cover and let it come to a boil for about 5 minutes.

6

Add long grain rice to the pot and measure the water level to ensure it is just above the rice, removing excess liquid if necessary.

7

Cover the pot with tin foil and place it in the oven for about 45 minutes or until the rice is thoroughly cooked.

8

Remove the scallion bits, thyme, and garlic from the pot after cooking.

9

Fluff the rice with a fork before serving.
