In a mixing bowl, combine 1.5 cups of arepa flour, 3/4 teaspoon of baking powder, and 1 teaspoon of salt.

Stir the dry ingredients together until evenly incorporated.

Add 1/4 cup of butter to the dry mixture and mix well.

Incorporate 1/2 cup of Monterey Jack cheese into the mixture.

Pour in 18 ounces of boiling water and mix until combined; the mixture may seem too wet initially.

Add oil and lime juice to the mixture and stir to incorporate.

Let the dough hydrate for about 30 minutes.

After 30 minutes, take a golf ball-sized portion of dough and form it into a patty about 1/2 inch thick.

Preheat a griddle and add a little oil.

Place the formed arepas onto the griddle and cook for about 5-6 minutes on each side until golden brown.

Transfer the cooked arepas to a rack and place them in the oven to keep warm.

Prepare the tomatillo salsa by removing the husks from tomatillos and rinsing them.

Cut the tomatillos and place them on a sheet tray for roasting.

Add half an onion and a jalapeno (with some seeds removed) to the tray.

Roast the vegetables under the broiler until they are browned.

Once roasted, place the vegetables in a food processor.

Add about 1.5 tablespoons of lime juice and some cilantro to the food processor.

Pulse the mixture until it reaches a chunky consistency.
