Cut half a head of cauliflower into florets.
In a mixing bowl, toss the cauliflower with a tiny amount of olive oil.
Add 3 tablespoons of cornstarch and garlic powder to the bowl and mix until the cauliflower is well coated.
Preheat the air fryer to 350 degrees Fahrenheit.
Place the coated cauliflower in the air fryer and cook for 15 minutes, adjusting the time for desired crispiness.
While the cauliflower is cooking, prepare the cheesy sauce by adding silken tofu, nutritional yeast, garlic powder, onion powder, paprika, lemon juice, apple cider vinegar, miso paste, salt, and pepper to a food processor or high-speed blender.
Blend the ingredients until smooth. If desired, add half a cup of soaked cashews for a creamier texture.
Cook 8 ounces of protein pasta according to package instructions.
Once the pasta is cooked, mix it with the cheesy sauce and set aside.
After 15 minutes, remove the cauliflower from the air fryer and coat it with buffalo sauce, adding salt and pepper to taste.
Plate the cheesy pasta and top it with the buffalo cauliflower. Garnish with scallions and vegan ranch if desired.
