2 cups water
about 10 oz cherry tomatoes
1/2 lb broccoli
1 can black beans
cooked corn
sliced scallion
sprouted pumpkin seeds
1 cup cilantro
1/3 cup lemon juice
1/4 cup olive oil
1 teaspoon salt
3/4 teaspoon ground black pepper
1/4 teaspoon garlic powder

Rinse 1 cup of quinoa and drain it.

In a saucepan, add 2 cups of water and 1 cup of quinoa. Bring to a boil.

In a bowl, add chopped raw broccoli and some of the dressing. Stir and let it soften and absorb flavors.
