Stir fry bacon until brown and cooked, then remove from the pan.
In the same pan, add minced meat and cook without additional seasoning.
Boil pasta sheets in water until soft, then drain and rinse with cold water.
Add cooked bacon back to the pan with minced meat.
Add chopped onions and stir.
Pour in red wine and cook on high heat until the alcohol cooks down.
Add tomato sauce with basil, tomato paste, and freshly chopped tomatoes to the pan.
Add two Scotch bonnet chilies and stir, allowing to cook for 2-3 minutes.
Season the mixture to taste, adding any preferred seasonings including dry sage leaf.
Add green pepper to the meat mixture and stir.
Layer the pasta sheets in a baking dish, followed by the meat mixture and sprinkle cheese on top.
Repeat the layering process for a second layer, finishing with cheese on top.
Bake in the oven for 40 minutes.
Allow the lasagna to rest after baking, although the creator forgot to do this initially.
Cut and serve the lasagna, noting that it was still breaking apart but tasted good.
Attempt to make the lasagna again, ensuring to use more cheese on top and allowing it to sit for 10 minutes after baking.
