Sprinkle 1 tablespoon of instant yeast over 1 and 1/4 cups of warm water and let it hydrate for a minute or two before stirring it in.
Add 2 tablespoons of sugar to the yeast mixture, reserving 1 teaspoon for later, and let it sit until foamy, about 5-10 minutes.
In a large bowl, mix 3 cups of all-purpose flour with 1 and 1/4 teaspoons of kosher salt.
Pour the yeast mixture into the flour mixture, followed by the remaining sugar and 3 tablespoons of olive oil.
Mix everything together until a dough forms, adjusting with flour if necessary to keep the dough slightly sticky.
Turn the dough out onto a floured surface and knead for about 8 minutes until smooth, adding flour as needed for consistency.
Form the kneaded dough into a ball and place it in a greased bowl, cover with plastic wrap, and let it rise for 1 hour until doubled in size.
After 1 hour, turn the dough out onto a floured surface, flatten it to remove air, and shape it into a ball, then let it rest for 15 minutes.
After resting, flatten the dough again and shape it into a parallelogram to fit into a greased 8.5 x 4 x 2.5 inch glass loaf pan, seam side down.
Cover the loaf pan and let the dough rise for another hour.
Preheat the oven to 400°F (204°C) about 30 minutes before baking.
Once the dough has risen, bake it in the preheated oven for about 40 minutes, checking at 30-35 minutes for doneness.
After baking, brush the top with melted butter to keep it soft.
