Insert sucker sticks into molds and lightly spray with non-stick cooking spray.
Place molds in freezer.
Combine sugar, water, and corn syrup in a saucepan and heat until sugar is dissolved.
Insert candy thermometer and bring mixture to 300 degrees F (hard crack stage). Do not stir at this point.
Let cool for a minute or two.
Add Extract and food coloring to desired color and mix well.
Remove molds from freezer and carefully pour candy mixture into them, pressing sticks back into place as needed.
Let cool for 2-3 hours.
Line a sheet pan with parchment paper.
Once suckers are cooled, heat the caramel in a microwave or double boiler until melted.
Dip each sucker into caramel and press onto parchment paper. Let cool for about an hour.
