Nutritional yeast provides a cheesy flavor with fewer calories.
Pour warm water and warm milk into a large bowl.
Add 14 grams of dry yeast, 2 tablespoons of plain yogurt, and 1 dessert spoon of sugar.
Add 70 mL of olive oil, 1 teaspoon of cinnamon, and 1 teaspoon of salt, then stir to combine.
Gradually add the grain mix of pumpkin, sunflower, and sesame seeds.
Add 1 kg of strong wholemeal bread flour until a sticky soft dough forms.
Use hands to mix, adding a drop of olive oil to avoid sticking.
Knead the dough for about 10 minutes until soft and slightly sticky.
Cover the dough with cling film or a damp tea towel and leave to proof for 2 to 4 hours.
After 2 hours, flatten the dough to about 2 cm thickness and sprinkle 400 grams of grated cheddar cheese on top.
Fold the dough to encase the cheese and seal the edges.
Divide the dough into two pieces using a pastry cutter.
Place the dough onto a greaseproof baking tray with the cheese exposed on the side.
Cover the top with the seed mix and let it rest for 30 minutes.
Bake in the oven for approximately 40 minutes at 200 degrees Celsius.
