Toast 1/2 cup walnuts in a dry skillet until fragrant.
Blend walnuts with 2 cloves garlic, 2 tablespoons white wine vinegar, and 1/4 cup water until chunky.
Let the dressing sit to soften the garlic flavor.
Chop about 1 pound of tomatoes into wedges.
Slice about 1 pound of cucumbers on the bias.
Thinly slice half of a small red onion and rinse in cold water.
Mince some green chili for spice and set aside a whole one for garnish.
Mince a few stalks of cilantro and some Thai basil.
In a large mixing bowl, combine tomatoes, cucumbers, red onion, minced green chili, cilantro, and Thai basil.
Add a pinch of salt and spoon in the walnut dressing, mixing well.
Taste and adjust with more dressing if needed.
Plate the salad and garnish with the whole green chili.
