Melt 2 tablespoons of butter in a frying pan.
Add 5 medium sized apples to the pan.
Add 1 stick of cinnamon to the apples.
Add 60 grams of caster sugar and 60 grams of brown sugar to the apples, adjusting the amount based on the sweetness of the apples.
Cook the apples for around 5 minutes until they start releasing their juice.
Remove the released apple juice into a bowl.
Add 1 tablespoon of corn flour to the remaining apple mixture to soak up the juices.
Once the juices evaporate, switch off the heat and add a few drops of lemon juice to the apples.
Boil the apple juice for around 5 to 7 minutes, stirring to prevent sticking.
Mix the boiled apple juice with the caramelized apples and let them cool completely.
Prick the base of an 8-inch pie pan with a fork to dock it, ensuring not to pierce all the way through.
Partially bake the pie crust in a preheated oven at 180 degrees Celsius for around 5 to 7 minutes to prevent sogginess.
Let the partially baked pie crust cool slightly.
Roll out chilled pie dough to make a lattice for the pie.
Cut the rolled dough into thin strips using a scale for evenness.
Transfer the caramelized apples into the prepared pie dish, removing the cinnamon sticks and ensuring not too much liquid is added.
Decorate the pie with the pie dough strips, cutting excess dough from the sides for a neat finish.
Bake the pie in a preheated oven at 180 degrees Celsius for around 35 to 40 minutes or until the apples start bubbling.
