1 packet ranch salad dressing mix
1 can corn
1 can black beans
1 can diced tomatoes and green chilies
1 and 1/2 cups chicken broth (made with water and bouillon cube)
1/3 cup onion, coarsely chopped
cilantro, chopped

Combine chili seasoning and ranch dressing mix in a bowl.

Season chicken breast with the seasoning mix on both sides.

At the 3-hour mark, add the whole brick of cream cheese to the pot and let it melt for about 30 minutes.

Remove chicken breast, shred it with two forks, and return it to the pot.

Stir everything together and let it simmer for another 45 minutes to an hour before serving.
