Add 2 tablespoons brown sugar to 1 cup warm water and sprinkle 2 teaspoons yeast on top.
Let the yeast bloom for a few minutes until frothy.
In a large bowl, add 3 cups bread flour and 1 teaspoon salt, then mix well.
Add the yeast mixture to the flour mixture and stir until combined.
Knead the dough by hand for about 5 minutes until it forms a cohesive ball.
Cover the bowl with a damp cloth and let it rest for 4 hours, performing stretch and folds every hour.
For each stretch and fold, wet your hands, pull the dough from the edges into the center about a dozen times, then cover again.
After the third hour, dust your work surface with flour and gently tip the dough onto the table.
Fold the corners of the dough into the center to create surface tension, then flip it over.
Shape the dough into a ball and place it into a lightly floured bowl or a bula mold, cover with a towel, and let it rest.
Preheat your oven to 450°F (232°C) with the Dutch oven inside for at least 30 minutes.
Prepare a piece of parchment paper with flour and gently flip the dough onto it, brushing off excess flour.
Score the top of the dough with a sharp knife or razor.
Carefully transfer the dough with the parchment paper into the preheated Dutch oven, cover with the lid, and bake for 30 minutes.
After 30 minutes, remove the lid and bake for an additional 15 minutes until golden brown.
Check the internal temperature of the bread; it should reach 200°F (93°C) to be fully cooked.
Remove the bread from the Dutch oven and let it cool on a wire rack for at least 30 minutes before slicing.
