Prepare the sauce by combining 100 g of plain mayonnaise, 1 tbsp of dijon mustard, 2 tsp of red wine vinegar, 1 tsp of dried parsley, 1 tsp of dried basil, and grated 1 clove of garlic in a bowl.
Season the sauce with salt and 10 cracks of black pepper, then mix until combined.
Chop 1 tomato into slices, then roughly chop it.
Chop half of a red onion after peeling off the skin and cutting off both ends.
Roughly chop 1 pickled chili, if using.
On a board, combine 100 g of ham, 100 g of salami, 100 g of mortadella, and 100 g of provolone cheese.
Add 100 g of washed lettuce, chopped tomatoes, chopped onion, and chopped chilies to the board with the meats and cheese.
Chop everything together to your preferred size, ensuring not to chop too small for texture.
Transfer the chopped mixture to a bowl and add 1 tbsp of extra virgin olive oil, 1 tbsp of red wine vinegar, a pinch of sea salt flakes, and 10 cracks of black pepper.
Mix everything together to coat with olive oil and vinegar.
Slice 1 substyle roll in half and toast it in an oven on the grill or broiler setting at 200° C (390° F) until toasted to your liking.
Spread the prepared sauce generously on both halves of the toasted bread.
Stack the chopped mixture onto the bottom half of the bread, ensuring a decent amount is included.
Place the top half of the bread on the sandwich and slice it in half to serve.
