Mediterranean Quinoa Bowl

2 bags Minute Instant Rice & Quinoa
3 seedless cucumbers, chopped
1 cup cherry tomatoes, halved
1 can chickpeas, drained and rinsed
1 avocado, sliced
hummus
tzatziki sauce
crumbled feta cheese
Fresh parsley, chopped (optional)
Olive oil, salt, and pepper to taste

Prepare the Rice & Quinoa: Follow package directions to prepare two bags of Minute Instant Rice & Quinoa. Ready in just 10 minutes!

Chop the Vegetables: While the rice and quinoa are cooking, chop the cucumber, halve the cherry tomatoes, and slice the avocado. Drain and rinse the chickpeas.

Assemble the Bowl: In a large bowl, combine the cooked rice and quinoa with the chopped cucumber, tomatoes, and chickpeas. Add the sliced avocado and top with hummus and tzatziki sauce.

Finish and Serve: Sprinkle crumbled feta cheese over the top and garnish with fresh parsley if desired. Drizzle with olive oil and season with salt and pepper to taste.
