Arabian Chicken Kabsa Rice

4 boiled eggs
chicken thighs and breast pieces
1/2 liter water
red and green chilies (whole)

Wash 2.5 glasses of basmati rice very nicely with water and soak for about half an hour.

In a large vessel, add ghee and then add chopped onions, sautéing until translucent.

Add half chopped red bell pepper and ginger garlic paste, cooking for a moment.

Stir in 2 tablespoons of SS brand kabsa masala and sauté well.

Add 1 cup of tomato puree and mix thoroughly, cooking until the mixture thickens.

Squeeze in the juice of half a lemon, then add 1/2 teaspoon red chili powder and 1/2 teaspoon turmeric powder, mixing well.

Add 4 boiled eggs to the mixture and sauté briefly before removing them.

Add chicken pieces with cuts made to allow the spices to penetrate, and sauté until well mixed.

Pour in 1/2 liter of water and cook the chicken on high flame, stirring occasionally until cooked at 80%.

Reduce heat to low and cover to cook the chicken fully, adding boiled eggs back in.

Once the chicken is cooked, remove it and check the consistency of the sauce, adding 1 cup of water if needed.

Bring the water to a boil before adding the soaked rice, ensuring the rice is long and fluffy.

Add whole red and green chilies for flavor and appearance, without cutting them.

Cover and let the rice cook on low flame for 5 to 10 minutes until done.

Prepare the dressing for grilling chicken by mixing some tomato paste, chili flakes, and melted butter in a bowl.

Brush the mixture onto the chicken pieces and grill on a rack or over a flame for about 10 minutes until well-marked and cooked.

Serve the kabsa rice on a large plate, topped with grilled chicken, roasted cashews, coriander leaves, and lemon slices.
