1

Separate the rotten beans from the good beans in the bag.

2

Remove any bad beans, such as cracked ones.

3

Place the good beans in a bowl of water and soak for about 4 hours (or overnight if possible).

4

Prepare the seasoning: have homemade Cajun seasoning, 2 bullion cubes, 1 tablespoon parsley flakes, 1 teaspoon Cajun seasoning, 1 teaspoon black pepper, and 2 bay leaves ready.

5

Chop the vegetables: dice 2 stalks of celery, slice green onions, chop 1 green pepper, and chop 1 onion into small pieces.

6

Add minced garlic to the vegetables (or chop garlic cloves if preferred).

7

Chop 2 smoked sausages into pieces.

8

Heat a pan over medium heat and add butter, then add the chopped sausage and vegetables.

9

Brown the sausage and vegetables for about 10 minutes.

10

Drain and rinse the soaked beans, then add them to the pot with the browned sausage and vegetables.

11

Add the smoked ham hock, chicken broth, and the seasoning (bullion cubes and bay leaves) to the pot.

12

Add additional water to the pot and bring to a simmer.

13

Let the mixture simmer for approximately 2 to 2.5 hours, stirring every 20 minutes, until the beans reach the desired softness.

14

Add additional butter towards the end of cooking for flavor and thickness.

15

Boil rice (using minute rice or other types like Goya or Jasmine) to serve with the beans.
