Use a ruler and a small knife to cut the round pie crust into rectangles.
Transfer the cut pie dough to a baking sheet lined with parchment paper.
Poke holes in two of the rectangles using a toothpick or chopstick for venting.
Chill the pie dough in the refrigerator for about 10 minutes.
Spread about 1 to 1.5 tablespoons of strawberry jam in the center of the rectangle without holes, leaving a quarter-inch border.
Brush the border with egg yolk for sealing.
Place the rectangle with holes on top of the jam-filled rectangle and press the edges to seal.
Crimp the edges with a fork to create a decorative border and ensure a tight seal.
Bake the Pop-Tarts in the oven at 400°F for 8 to 10 minutes.
Cut pie crust scraps into pieces, sprinkle with granulated sugar and cinnamon, and bake for about 6 minutes until crispy and golden.
Make royal icing by whisking egg white with a pinch of kosher salt until frothy, then add 2 cups of powdered sugar, a squeeze of lemon juice, and half a teaspoon of vanilla extract.
Transfer the royal icing to a piping bag and pipe a border around the Pop-Tarts, then fill in the center with icing and spread it out.
Add sprinkles on top of the icing.
