Preheat the oven to 350°F (175°C).
In a mixing bowl, combine cornstarch, brown sugar, salt, and cinnamon.
Chop and pit the peaches, then add them to the bowl with the brown sugar mixture and let them marinate for about 20 minutes.
In another bowl, zest one lemon and mix the zest with the white sugar.
Squeeze half of the lemon juice over the marinating peaches and stir.
Combine the dry ingredients (oats, flour, cinnamon, and salt) with the lemon-sugar mixture.
Add the melted butter, vanilla extract, and almond extract to the dry ingredients and mix until it forms a shaggy dough.
Press two-thirds of the crumble mixture into the bottom of an 8x8 baking pan lined with parchment paper.
Spread the marinated peach mixture evenly over the crust.
Sprinkle the remaining crumble mixture over the peaches without packing it down.
Bake in the preheated oven at 350°F for 25 minutes, then increase the temperature to 400°F and bake for an additional 15 minutes until golden brown.
Remove from the oven and let cool in the pan on a cooling rack for about 45 minutes.
Refrigerate for an additional hour and a half before cutting into bars.
