Preheat the oven to 350°F.
Prepare a pan with water for a water bath.
Crack 4 large eggs into a bowl.
Microwave 4 cups of milk until it reaches 180°F, stirring continuously.
Whisk the eggs, then add 1/2 cup sugar, 1 teaspoon vanilla extract, and 1/2 teaspoon Himalayan pink salt; whisk until combined.
Once the milk reaches 180°F, take 1 cup of it and temper the eggs by slowly adding the milk to the egg mixture while whisking.
Add the remaining milk to the egg mixture and whisk until smooth.
Pour the custard mixture into ramekins or a baking dish.
Sprinkle 1/2 teaspoon nutmeg evenly over the top of the custard mixture.
Place the ramekins or baking dish in the oven for approximately 35 to 40 minutes, checking for doneness.
After 40 minutes, check the custard; if it needs more time, bake for an additional 20 minutes until set.
Remove from the oven and leave in the water bath to cool before serving.
