Heat a pan over medium heat.

Melt 4 tablespoons of butter in the pan.

Add half of the 4 cups of corn to the pan and let it cook.

Sprinkle in 3/4 teaspoon of salt and 1/2 teaspoon of chili powder.

Add 1/4 cup of crema mexicana to the corn mixture.

Simmer the mixture for 5 to 10 minutes, stirring occasionally, for about 3 minutes.

Turn off the heat after 3 minutes of cooking.

Plate the corn mixture and top with queso fresco and a squeeze of lime juice.

Optionally, add more crema, mayonnaise, chili powder, or tahin to taste.
