1

Grill the corn over medium-high heat for 10–15 minutes, turning every few minutes until it’s charred in spots.

2

Preheat the broiler by setting your oven to broil on high (usually ~500°F) and letting it heat for 5–10 minutes.

3

Brush corn lightly with oil or melted butter for a deeper char, and optionally sprinkle with a little salt.

4

Line a baking sheet with foil for easy cleanup and place the corn directly on the sheet or use a wire rack for even browning.

5

Place the baking sheet on the top rack, about 4–6 inches from the broiler and broil for 2–3 minutes per side, rotating every couple of minutes with tongs for a total time of 8–10 minutes until you see beautiful brown/black charred spots.

6

In a small bowl, mix mayonnaise, sour cream (or crema), garlic (optional), and lime juice to make the sauce.

7

While the corn is still hot, brush or spread the sauce generously all over each ear of corn.

8

Sprinkle on cotija cheese and dust with chili powder or TajĂn, adding chopped cilantro if desired.
