Heat 2 Tbsp of extra virgin olive oil in a pan over medium heat.

Add 1 Tbsp of butter to the pan.

Season the halibut with salt and place it in the pan, frying for 2.5 minutes or until golden.

Add black pepper to the halibut.

Flip the halibut over and add 3 slices of lemon, frying together for an additional 2.5 minutes.

Transfer the halibut onto a plate and empty the pan into a small bowl, letting the burnt bits settle at the bottom.

Do not wash the pan; pour 3 Tbsp of brown butter back into the pan, avoiding the burnt bits.

Add 2 chopped garlic cloves to the pan and fry for 20-30 seconds.

Pour in 1/4 cup of white wine to deglaze the pan.

Add 2 Tbsp of lemon juice to the mixture.

Stir in 3 Tbsp of chopped flat leaf parsley and 2 Tbsp of capers.

Add 1 Tbsp of butter to the pan and place the halibut back in to heat it up.
