8 ounces block feta cheese

Preheat the oven to 350°F (175°C).

In a bowl, combine 1 cup of halved green olives and 1/2 cup of roughly chopped sun-dried tomatoes.

Mince 3 garlic cloves and add them to the bowl.

Measure out 1/3 cup of extra virgin olive oil and pour it over the olives and tomatoes.

Add 1/2 teaspoon of dried oregano, 1/2 teaspoon of dried thyme, 1/2 teaspoon of dried basil, a pinch of red pepper flakes, a few grinds of sea salt, and a few grinds of black pepper to the bowl.

Stir the mixture to ensure the herbs are well mixed and everything is coated in olive oil.

Place 8 ounces of block feta cheese into a baking dish.

Pour the olive and sun-dried tomato mixture over the feta, pushing most of the toppings to the side to allow the feta to get color while baking.

Bake in the preheated oven for 20 to 25 minutes until the feta is softened.

If desired, turn on the broiler for 1-2 minutes to add color to the top, watching carefully to avoid burning.
