1

Preheat your oven to 350°F.

2

Place the feta in a baking dish.

3

Prepare the topping by slicing Castelvetrano olives using a plastic deli lid to hold them in place.

4

Slice drained sundried tomatoes into bite-sized pieces.

5

Peel 3 cloves of fresh garlic by smashing them with the flat surface of a knife's blade and removing the skins.

6

In a medium mixing bowl, combine the olives, sundried tomatoes, and pressed garlic.

7

Pour in extra virgin olive oil and add Greek seasoning, red pepper flakes, and fresh ground pepper. Mix the topping ingredients together.

8

Pour the topping over the feta, ensuring it's fully coated in oil, then push the olives and sundried tomatoes to the side to prevent burning.

9

Bake for 20 minutes until the feta is softened.

10

Turn on the top broiler for 1 to 2 minutes to lightly brown the top of the feta, watching closely to avoid burning the olives and sundried tomatoes.

11

Once out of the oven, spoon some of the topping back over the feta.

12

Serve with crunchy items like crustinis, crackers, or cucumber slices.
