Start by making the graham cracker crust using 100 grams of graham cracker crumbs, which is about six and a half whole graham crackers, crushed.
Optionally, use digestive biscuits instead of graham crackers, needing about seven biscuits, crushed in a food processor.
Melt 4 to 5 tablespoons of butter (55 to 65 grams) and mix it with the crushed graham crackers or digestive biscuits until it holds together.
Line a 12-cup muffin pan with paper liners for easier removal of the cheesecakes.
Press about one tablespoon of the crust mixture into the bottom of each muffin liner and refrigerate for about 10 minutes to set.
Preheat the oven to 300°F (150°C).
In a stand mixer with a paddle attachment, beat together 450 grams of room temperature cream cheese and 135 grams of granulated sugar on low speed until smooth.
Add 1/2 teaspoon of grated lemon zest and 1 teaspoon of vanilla extract, mixing until combined.
Add 2 large eggs (100 grams total), one at a time, mixing on low speed until just incorporated after each addition.
Finally, add 120 milliliters of room temperature sour cream and mix until fully combined.
Evenly divide the cheesecake filling among the muffin cups, using a cookie scoop or measuring cup to ensure equal amounts.
Bake in the preheated oven for 18 to 22 minutes, rotating the pan halfway through for even baking.
The cheesecakes are done when the edges are set but the centers are still slightly wet. Let them cool in the oven after turning it off for about 30 minutes.
