Start by heating a pan over medium-low heat, aiming for 320°F.
Add unsalted butter to the pan and sprinkle a little salt in.
Toast the inside of the sourdough bread in the pan until lightly golden.
Assemble the sandwich by placing one slice of bread in the pan, butter-side down.
Add one slice of American cheese in the center of the bread.
Fill the rest of the sandwich with a mix of other cheeses, like medium cheddar.
Spread about a teaspoon of room temperature butter on the other side of the bread.
Place the second slice of bread on top, butter-side up.
Cook the sandwich for about 3 minutes on one side, ensuring a slow cook to avoid burning.
Flip the sandwich carefully using a flexible spatula.
Add more butter and sprinkle salt on the second side of the sandwich.
Use a Chef's press to apply light pressure on the sandwich while it cooks.
Cook for another 3 minutes on the second side until golden brown and cheese is melted.
Remove the sandwich from the pan and let it cool slightly before slicing.
