half a bag of tater tots
1 onion
4 strips of bacon
1 stick of chorizo

Line a tray with baking paper.

Lay out half a bag of tater tots on the tray.

Slice in the oven at 356°F (180°C) for 20 minutes or until crispy.

Roughly chop 1 onion.

Roughly chop 4 strips of bacon.

Finely chop 1 stick of chorizo.

Heat a pan over medium heat and add some butter.

Fry the onions in the butter until they begin to soften.

Add the bacon to the onions once the onions are soft.

Once the bacon has begun to fry, add the chorizo.

Fry until the bacon and chorizo become crispy and the onions brown.

Take it off the heat and set the onions, chorizo, and bacon to one side.

Once the tater tots are finished cooking, place them on the pan used for the onions, chorizo, and bacon.

Season with chicken salt.

Spread over the onion, chorizo, and bacon pieces.

Cover with grated cheese.

Place the pan under the grill for a few minutes to melt the cheese.

Top with chives.
