Start by preparing the lime dressing ingredients: extra virgin olive oil, garlic powder, ground coriander, fresh lime juice, date paste, dijon mustard, and salt.
Measure about a quarter of a cup of olive oil into a bowl.
Add dijon mustard using fingers, ensuring they are clean.
Add heaping tablespoons of date paste to the bowl.
Add half a teaspoon of garlic powder and half a teaspoon of ground coriander.
Roll the limes on the counter to loosen the juices, then cut in half and juice to get about a quarter of a cup.
Add a pinch of salt to the dressing mixture and whisk everything together until combined.
In a large bowl, add mixed greens and begin chopping other ingredients: mushrooms, artichoke hearts, and cabbage, adding them to the bowl as you go.
Chop cooked beets and add them to the salad bowl.
Add sprouted pumpkin seeds and a sprinkle of hemp hearts to the salad.
Slice organic strawberries and add them to the bowl.
Cut the organic apple into bite-sized pieces, adding it last to prevent oxidation.
Crumble goat cheese over the salad.
Toss the salad gently to mix all ingredients together and coat with dressing.
