Pasta alla Genovese

Slice 5 1/2 to 6 cups of onions and 2 or 3 shallots.

Melt butter in a pan and add the sliced onions and shallots.

Turn the heat down to medium-low (3 out of 10).

Add a little bit of salt and pepper to the onions.

Pour in a couple glugs of white wine and stir to mix with the onions and butter.

Add sprigs of thyme and cover the pan with a lid.

Let the onions sweat for 15 to 20 minutes with the lid on.

Remove the lid and continue cooking the onions until they are caramelized, about 35 to 40 minutes total.

Add 3/4 cup of white wine to deglaze the pan, scraping the fond off the bottom.

Once the wine is boiling, add beef stock and bow tie pasta to the pan.

Stir the pasta to submerge it and cover the pan with a lid.

Simmer for 10 to 15 minutes until the pasta is just toothsome, stirring occasionally to prevent sticking.

Turn off the heat and add a dollop of mustard and 2 spoonfuls of Worcestershire sauce to the pasta.

Stir in a mountain of Pecorino cheese until well mixed.

Spread mozzarella cheese on top and grate Gruyere cheese over it.

Sprinkle breadcrumbs on top (panko is preferred but regular breadcrumbs can be used).

Turn on the broiler and place the dish under it to melt the cheese and brown the top, watching closely.
