Heat up some bacon fat in a pan.
Brown the beef rib finger meat in the bacon fat until seared on the bottom, then stir.
Remove the beef from the pan after browning.
Add bacon to the pan and cook it slightly.
Add chopped celery and carrots to the pan with the bacon.
Season with salt and pepper.
Pour in a few glugs of white wine.
Add about four pounds of chopped onions to the pan, filling it up.
Put the beef back into the pan with the onions and other ingredients.
Cover the pot and place it in an oven preheated to 325 degrees Fahrenheit.
Cook in the oven for about five hours, stirring every half hour to ensure nothing sticks or burns.
After five hours, break up the beef with the back of a spoon until it falls apart completely.
