Grilled Chicken Skewers with Alabama White Sauce

Debone skin-on, bone-in chicken thighs and cut into chunks.
Skewer the chicken chunks onto metal skewers.
Preheat the grill to high heat.
Lightly season the skewers with olive oil, coarse sea salt, and black pepper.
Place the skewers on the grill over direct heat and cook for 15-18 minutes, turning occasionally.
While the chicken is grilling, make the Alabama white sauce by mixing mayonnaise, apple cider vinegar, dark corn syrup, prepared horseradish sauce, cayenne pepper, salt, black pepper, lemon juice, and finely chopped pickled jalapenos.
Mix until fully combined and refrigerate for at least an hour before serving.
Once the chicken is almost done, slather the Alabama white sauce on the skewers.
