Quarter the ripe tomatoes and place them in the Thermomix.

Add 90 grams of chopped red pepper, 70 grams of quartered red onion, and 1 garlic clove to the bowl.

Chop the mixture for 5 seconds using the Thermomix.

Scrape down the sides of the bowl to ensure everything is at the bottom.

Add 25 grams of red wine vinegar, 30 grams of honey, a pinch of nutmeg, 1/4 teaspoon of ground black pepper, 1/2 teaspoon of sweet paprika, and 1/2 teaspoon of sea salt to the bowl.

Place the simmering basket on top of the Thermomix lid to allow steam to escape while cooking.

Cook the mixture at 100 degrees Celsius for 10 minutes to reduce and thicken.

After 10 minutes, add the measuring cup and steam for an additional 18 minutes to further reduce the mixture.

Blend the mixture for 1 minute until smooth.

Strain the blended ketchup through a fine sieve to remove seeds if desired.
