Homemade Tomato Ketchup

Cultural Context

Ketchup, often associated with American cuisine, has roots that trace back to fermented sauces in Southeast Asia. Its transformation into the sweet and tangy condiment we know today began in the 19th century. Homemade versions allow for customization of flavors and sweetness, making it a beloved staple in many households. Today, ketchup is enjoyed globally, with variations that reflect local tastes and ingredients.

1

Wash and cut 12 large ripe tomatoes into large pieces.

2

In a wide saucepan, add 1 cup of water and the spices: 6 cloves, 1 small piece of cinnamon, and 1 teaspoon of peppercorns.

3

Cook the spices in water for 2 minutes.

4

Add the chopped tomatoes to the saucepan and cook on medium flame for about 30 minutes.

5

Once cooked, cool the tomatoes completely; the skin will come off by itself.

6

Transfer the cooled tomatoes to a mixer jar and grind to a fine puree.

7

Strain the tomato puree completely into another pan to remove excess moisture.

8

Cook the strained tomato puree further to reduce it, adding 1 teaspoon of salt and 2 teaspoons of sugar after 5 minutes.

9

Check for seasoning and adjust according to taste.

10

Continue cooking until the puree reaches a thick, dropping consistency, about 30 minutes.

11

Add 1 teaspoon of vinegar to increase shelf life.

12

Cool completely before bottling.
