St. Louis Style Spare Ribs

Cultural Context

St. Louis Style Spare Ribs are a regional barbecue specialty that originated in the Midwest, particularly in St. Louis, Missouri. Known for their distinctive rectangular shape, these ribs are trimmed to remove the sternum and cartilage, making them easier to eat and cook evenly. Traditionally, they are coated with a flavorful dry rub and often served with a tangy barbecue sauce. Today, they are celebrated across the United States, especially during summer cookouts and barbecue competitions.
