Brown 3 lbs of ground chuck in a pan until sizzling, not simmering, ensuring all water evaporates.
Add 8 oz of crimini mushrooms, 1 large sweet onion, 1 cup of chopped celery, and 1 green bell pepper to the browned meat.
Cook the mixture for about 10 minutes, stirring well and optionally covering with a lid to sweat down the vegetables.
Add spices: 2 tbsp sweet paprika, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp salt, 1 tsp cracked black pepper, and 1 tbsp Worcestershire sauce to the pan.
Stir in 1/2 cup brown sugar, 1 10 oz can of tomatoes and green chilies, 1/2 cup yellow mustard, and 2 cups ketchup.
Mix thoroughly until the sauce is well incorporated and has an even color.
Taste the mixture and adjust seasonings if necessary before simmering.
Turn the heat down to medium and cover the pan slightly ajar to let it simmer for about 15 minutes.
Serve the Sloppy Joe mixture on buns with a side of French fries.
