Heat a frying pan on the stove and add 1 tablespoon of safflower oil to prevent sticking.
Add 2 lbs of very lean ground beef to the pan and brown it, breaking it up finely as it cooks.
Once the beef is added, add 1 large diced sweet onion, 1 chopped bell pepper, and 2 finely chopped celery stalks to the pan to cook with the meat.
Cook the meat and vegetables until they are crumbly and fine, ensuring they are not chunky.
Add the 14 oz can of mushrooms along with their liquid to the pan to deglaze and add flavor.
Next, add the 10 oz can of diced tomatoes with green chilies to the mixture.
Stir in the minced garlic, 1 1/2 cups of ketchup, 1/4 cup of yellow mustard, and 1 tablespoon of Worcestershire sauce.
Add 1/2 cup of brown sugar, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1 tablespoon of paprika to the mixture.
Season the mixture with 1 teaspoon of salt and 1 teaspoon of black pepper, stirring well to combine everything.
Let the mixture simmer for about 15-20 minutes to thicken up nicely.
After simmering, serve the Sloppy Joe mixture on buns.
