Soak 200 grams of sweet potato noodles in cold water for about 30 minutes.

Prep the ingredients: julienne 2/3 of a small carrot, trim the ends off 3 shiitake mushrooms and cut them into quarters, and prepare 9 or 10 wood ear mushrooms by trimming the ends and cutting them into manageable pieces.

Cut an onion in half and slice it for later use.

Wash and trim 2 large handfuls of spinach, cutting large pieces in half for easier eating.

Season 100 grams of shredded pork with 1 tablespoon of soy sauce, 1 tablespoon of sesame oil, 1 teaspoon of sugar, 1 teaspoon of minced garlic, and a few shakes of black pepper, mixing well.

Blanch the spinach in boiling salted water for 10 seconds, then cool it in cold water and squeeze out excess water, seasoning it with 1 tablespoon of sesame oil and salt.

In a large skillet over medium-low heat, add oil and sautรฉ the onion until translucent, then add the carrots with a pinch of salt, followed by the mushrooms and more oil, and finally the seasoned pork until cooked through.

Boil the sweet potato noodles in water for 3 minutes, then drain and cool them off.

In the skillet, add 3.5 tablespoons of soy sauce, 3 tablespoons of sesame oil, 1.5 tablespoons of sugar, 1 teaspoon of minced garlic, and black pepper, mixing well until it starts to boil.

Add the drained noodles to the skillet and stir-fry for 2 minutes on medium-low heat to absorb the flavors.

Transfer the noodles to a mixing bowl and add all the sautรฉed vegetables, mixing well, ideally using hands or chopsticks.
