Wash the shiitake mushrooms a couple of times and soak them in water for 30 minutes to an hour depending on the thickness of the mushrooms.

Thinly slice the beef.

Marinate the beef with minced garlic, sugar, cooking liquor or wine, soy sauce, sesame oil, and black pepper. Set aside for 30 minutes.

Chop off the root of the enoki mushrooms and cut off the stems of the soaked shiitake mushrooms. Save the water used for soaking the mushrooms.

Slightly boil the oyster mushrooms and rinse with cold water immediately. Squeeze gently to retain the juice.

Thoroughly wash the wrinkly part of the shiitake mushroom head to remove dirt and squeeze gently as well.

Wash the enoki mushrooms and separate them by hand. Drain all the water.

Slice the shiitake mushrooms and tear the oyster mushrooms into bite-sized pieces. Season with salt, pepper, and sesame oil.

Boil the noodles according to the package instructions, stirring occasionally to prevent sticking. Wash with cold water a couple of times and drain.

Cut the noodles using scissors.

Start stir-frying the vegetables in veggie oil, seasoning each separately with salt.

Stir-fry the marinated beef in the same pan to retain the juices.

Add the shiitake mushroom soaking water, soy sauce, sugar, salt, and veggie oil to the pan and continue frying.

Remove from heat and add the enoki mushrooms, gently stirring to mix everything together.

Add more sesame oil and sesame seeds before serving.
