1 cup chicken broth

Season the chicken thighs with 1 tablespoon of Lawry's seasoned salt, 1 teaspoon each of garlic and onion powder, 1/4 teaspoon of poultry seasoning, and 1/4 teaspoon of white pepper. Drizzle with olive oil and season both sides.

In a skillet on medium to medium-high heat, add enough oil to coat the bottom of the pan and place the chicken thighs skin side down.

Cook the chicken for about 4 to 5 minutes until the skin forms a nice golden crust, then flip and cook for an additional couple of minutes.

Place the chicken in a preheated 375 degree Fahrenheit oven for 30 to 40 minutes until the internal temperature reaches 165 degrees.

Remove the chicken from the oven and the pan, cover, and set aside. Leave about 2 tablespoons of fat in the pan and scoop out the rest.

Add 1 large finely diced onion (about 1.5 cups) to the pan on medium heat and cook until the onions sweat down and deglaze the pan.

Taste for seasonings and turn the heat up to bring to a simmer. Cook on low simmer for 5 to 7 minutes until the gravy reduces and thickens.

Turn off the heat and stir in a handful of fresh chopped parsley, a little more black pepper, and 1/4 cup of grated Parmesan cheese.
