Chop the smoked brisket to your desired size, either fine or coarse, and place it in one corner of the disposable aluminum pan.
Add the cream of mushroom to the pan.
Pour in 2/3 to a full can of Rotel diced tomatoes and green chilies (used 2/3 for this video).
Add 2 tablespoons of butter to the pan.
Pour in half a pint of heavy cream.
Cube the block of easy melt cheese and add it to the pan, keeping the ingredients somewhat separated initially.
Preheat the smoker to 275°F.
Once the smoker reaches temperature, place the pan with the brisket queso on the grate.
Smoke for about 30 minutes, then stir to combine the melted cheese with the other ingredients.
After another hour of smoking, stir again to mix in the ingredients thoroughly and check for a smooth, creamy texture and golden hue.
Serve with sturdy tortilla chips.
