Cube the block of easy melt cheese and add it to the pan, keeping the ingredients somewhat separated initially.

Preheat the smoker to 275°F.

Once the smoker reaches temperature, place the pan with the brisket queso on the grate.

Smoke for about 30 minutes, then stir to combine the melted cheese with the other ingredients.

After another hour of smoking, stir again to mix in the ingredients thoroughly and check for a smooth, creamy texture and golden hue.
