Prepare the pizza sauce by boiling 500 g of plum tomatoes until the skins peel easily, then chop them coarsely.

Gently heat 2 teaspoons of olive oil in a pan and add 4 crushed garlic cloves, cooking until starting to brown.

Add the chopped tomatoes to the pan and cover, cooking on low heat for about 1 hour, stirring occasionally.

After an hour, add 3 tablespoons of freshly chopped oregano and season the sauce, cooking uncovered for another 15 minutes until thickened.

For the dough, mix 1 teaspoon of dried yeast and 1 teaspoon of salt into 125 ml of warm water and let it sit for 10 minutes.

Make a well in 250 g of strong white flour, add the yeast mixture, and mix until a dough forms, adjusting with more water or flour as needed.

Knead the dough for 10 to 15 minutes until soft and not sticky, then let it rise in a warm place for 1 to 1.5 hours.

Once risen, knock back the dough and stretch it into a circle on a floured surface.

Transfer the dough to a baking tray, spread on the prepared pizza sauce, and sprinkle with mozzarella cheese.

Add toppings of your choice, such as turkey salami and mushrooms, and drizzle with a little olive oil.
