Cook 2 bratwurst links then set aside.

Place cubed potatoes in a stock pot and add 6 cups of water. Boil 15 minutes. Skim off any foam that forms on the top.

Fry the bacon on medium heat, then add the chopped celery, onions, carrots, leeks, and chopped sausage.

Stir to combine. Cook until veggies are softened.

Stir in garlic and thyme. Then add salt, pepper, oregano, and parsley.

Slightly mash the potatoes, then add the veggie and meat mixture to the soup pot. Cook another 5 minutes, then serve.
