Add bacon bits to a pot and heat on high heat for about 5 minutes.

Add carrots, leek, and celery; roast for about 10 minutes.

Add diced potatoes and roast for about 5 minutes.

Add vegetable broth and let it simmer for 20 minutes.

After 20 minutes, add parsley.

Use an immersion blender to blend the soup a few times for a creamy consistency with some chunks.

Season with black pepper and serve.
