Whole wheat flour adds fiber.
Add 2 cups of flour to a food processor.
Add 2/3 cup of very cold butter, 1 teaspoon of salt, and 8 tablespoons of ice water to the food processor.
Pulse until the mixture forms a ball of dough.
Turn the dough out onto parchment paper and form into a ball.
Roll out the dough into a large rectangle.
Place the rolled dough in the freezer for a few minutes to firm up.
Mix 1/2 cup of brown sugar, 2 tablespoons of flour, and 1 teaspoon of cinnamon in a bowl for the filling.
Slice the rolled dough into squares, reserving half for the tops of the Pop-Tarts.
Spoon filling onto half of the squares, leaving space around the edges.
Place the remaining pastry squares on top and seal the edges with a fork.
Make an egg wash by whisking 1 egg with a little water and brush it onto the pastries.
Preheat the oven to 350°F.
Bake for 20-25 minutes until golden brown.
Mix 2/3 cup of powdered sugar, a splash of vanilla, and water to make the glaze.
Frost the cooled pastries with the glaze.
