Thaw bison steaks in the refrigerator for two days or place them in a bowl in the sink and run cool water over them for 20-30 minutes.
Preheat the grill for 15-20 minutes until hot.
Season one side of the steaks with granulated garlic, sea salt, and black peppercorn.
Spray the seasoned side of the steaks with olive oil spray.
Place the steaks on the grill and listen for the sizzle.
Season the other side of the steaks with granulated garlic, sea salt, and black peppercorn, then spray with olive oil.
Cook the steaks for about 5 minutes before flipping them.
After flipping, cook the steaks for an additional 3 minutes.
After cooking, let the steaks rest to allow juices to redistribute.
Add a little sea salt and black pepper if needed before serving.
