1

Heat a pot on medium heat.

2

Add sugar to the pot and jiggle it side to side to spread it evenly.

3

Add a bit of water to the sugar, moving it around lightly to wet the sugar.

4

Let the sugar sit until it starts to dissolve, brushing the sides with a brush to prevent sugar crystals from forming.

5

Wait for the sugar to bubble and turn caramel color, keeping an eye on it to prevent burning.

6

Once caramelized, quickly pour the caramel into a ramekin, coating the sides before it hardens.

7

In a mixing bowl, crack in 3 eggs and whisk on high until fluffy.

8

Pour in evaporated milk and mix again.

9

Add sweetened condensed milk and mix again.

10

Slowly add sugar to the mixture and mix until combined.

11

Pour the mixture into the ramekin, filling it almost to the top.

12

Prepare a baking dish with water, filling it just under a quarter of the way.

13

Place the ramekins into the baking dish with water.

14

Bake in a preheated oven at 160°C for 45 minutes.

15

Remove from the oven and let cool for 1 hour in the fridge.

16

After cooling, place a plate on top of the ramekin and flip it over to release the flan.
