Homemade Garlic Knots

Cultural Context

Garlic knots are a beloved Italian-American creation, often served in pizzerias across the United States. They are made from leftover pizza dough, twisted into knots, and baked with garlic and butter. This dish has become a staple appetizer or side dish, celebrated for its buttery, garlicky flavor and soft, chewy texture. Today, garlic knots are enjoyed in various forms, with some variations incorporating herbs and different cheeses.

1

Pour water, sugar, salt, and yeast into a bowl and stir until dissolved.

2

Add flour and knead the dough by hand or using a stand mixer for 7-8 minutes until soft and smooth.

3

Shape the dough into a round ball, apply olive oil on top, cover, and let it rise for about 90 minutes.

4

After 90 minutes, degas the dough and transfer it to a clean work surface.

5

Divide the dough into four equal parts and shape each into a rectangle, dusting with flour to prevent sticking.

6

Divide each rectangle into half and then each half into two to get four dough strips from each rectangle.

7

Roll each strip to form a rope approximately 7 inches long and tie into a knot, placing it upside down on a parchment-lined baking sheet.

8

Cover the rolls and let them rise in a warm place for around 45 minutes.

9

In the meantime, make the topping by heating 4 tablespoons of butter in a pan, adding 4 cloves of finely chopped garlic, and cooking until fragrant without browning.

10

Remove from heat, add chopped parsley, and season with salt.

11

After 45 minutes, brush the rolls with the garlic butter topping before baking.

12

Bake in a preheated oven at 200°C (390°F) for 18-20 minutes until golden brown.

13

After baking, brush with the remaining garlic butter and top with parmesan cheese before serving warm.
