Homemade Garlic Knots

Cultural Context

Garlic knots are a beloved Italian-American creation, often served in pizzerias across the United States. They are made from leftover pizza dough, twisted into knots, and baked with garlic and butter. This dish has become a staple appetizer or side dish, celebrated for its buttery, garlicky flavor and soft, chewy texture. Today, garlic knots are enjoyed in various forms, with some variations incorporating herbs and different cheeses.

1

Measure out 1 cup of hot water from the faucet, ideally at 115°F.

2

Pour the hot water into the bowl of a stand mixer.

3

Sprinkle over a packet of Rapid rise yeast and add 1 teaspoon of sugar.

4

Stir the mixture and let it sit for about 10 minutes until foamy.

5

Add 12 1/2 oz of bread flour (2 1/2 cups), 1 tablespoon of olive oil, and 3/4 teaspoon of sea salt to the bowl.

6

Use the dough hook to stir and form a shaggy dough.

7

Knead the dough on medium low speed for 10 minutes until smoother and cohesive.

8

Scrape the dough off the dough hook and cover the mixing bowl with plastic wrap to rise for about 1 hour until doubled in size.

9

Remove the dough from the bowl and place it on a floured surface.

10

Cut the dough in half, then cut each half into eight equal pieces.

11

Roll each piece into a long rope about 6 or 7 inches in length and tie it into a knot.

12

Place the garlic knots on a silicone mat lined baking sheet and cover them to rise for another 30 minutes.

13

Combine 1/2 stick of butter and 2 teaspoons of garlic powder in a bowl and microwave until melted.

14

Brush the garlic butter mixture all over the garlic knots.

15

Bake in a preheated oven at 425°F for about 8 to 10 minutes until puffy and golden brown on the bottom.
